At the yeast phase, doubling consistently & hitting peak means ready for use. Triple is better. Often people use rubber bands to track. Great that the 24-hour cycle works, mine peaks and falls in just 8 hours without temp control! At the peak rise, wild yeast reaches max activity. When it falls, food is gone and lactic acid bacteria keep building up acidity. If starving for too long after falling, it can weaken the yeast. I try to feed at that transition when the drop happens and yeast is most active.
I started with 1:1:1 but now I use a 1:3:3 ratio for a more yeast-dominant starter, and later will split some off to make low-hydration stiff starters.
