Lots of organs have electric action so connecting via midi is either not to hard or already built in. But yeah, you could get the effect by mixing the output of multiple pipes.

I am not saying that it is impossible. Just that it is a very unusual sound for a pipe organ. Though I am not sn expert. I don't have a very good musical ear.
