Had planned on making stuffed poblano peppers, I waited too long and my peppers were pretty wrinkly. Not bad, just not stuffing worthy. Made the ground beef and quinoa filling, cut the poblanos in to strips and mixed it all up in the skillet, topped it with cheese and baked for about 15 min 🫄. Stuffed poblano casserole ftw. #youcanjustturnitintoacasserole
