2026-07-19 15:04:00 UTC

I've lived in the world of "You can just do things" for so long that meeting people who worship credentialism shocks me back to reality.
I didn't get a degree in Winemaking.
So many people are pacified by a system that wants you to ask for permission to do anything.
You don't need permission and you definitely don't need to pay the price of a house to learn from someone who talks about doing things for a living instead of doing them.
The whole arrangement is masturbatory. For you and for the winners of a system that gets off on keeping you trapped and docile.
You have all the tools and information available to go 1) find the thing you are passionate about 2) learn how to do it or find someone willing to teach you.
Be curious. Keep moving.

It's already a bad wildfire season out west.
How does smoke taint wine?
When wood burns it releases volatile phenols that grapes absorb into their skins. A trace of these compounds gives barrel-aged wine its pleasant toasty note, but wildfire smoke can make a wine taste like licking a cold fireplace.
The grapes bind the smoke compounds to sugar molecules where you can't taste or smell them right away. The taint stays hidden until fermentation and aging, then comes back again in your mouth, where your saliva snaps those bonds and releases the smoke all over again.
Timing matters. Smoke before veraison does little damage. Grapes are most vulnerable from about 7 days after veraison, when they start turning red, through harvest.
Red wines get hit harder than whites, because the taint lives in the skins and red winemaking soaks the juice on those skins during fermentation.
In the cellar the fixes are blunt. Reverse osmosis can strip the free smoke compounds out, and activated carbon or heavy fining can knock them down too. All of that pulls out color and aroma along with the taint, and none of it removes the bound smoke still locked in the wine. A "fixed" wine can taste clean at bottling and turn ashy again over the following months.
For a low-intervention winemaker like me, there is no true solution.
My plan for a heavy smoke year is to make a rosé. I'll press the fruit fast and pull the juice off the skins before the taint can settle in.

Clay is one of the most common ingredients in commercial winemaking.
Winemakers add bentonite to wine, where it binds to proteins and pulls them out of suspension. They settle to the bottom and get removed.
Wine proteins clump and haze when exposed to heat. Bentonite removes those proteins, which is why so many commercial wines stay clear no matter how they're stored.
The obvious tradeoff is texture.
Proteins are part of what gives wine body and roundness. Removing them makes a wine feel thinner.
Whites get fined more aggressively than reds because tannins in red wine naturally bind some of those proteins on their own.
Drinking clay residue isn't the concern. That settles out and gets filtered off. The issue is how the removal of proteins changes the way your body interacts with the wine.
Proteins help your body absorb polyphenols. Polyphenols are the primary reason wine has any health case at all. Remove the proteins and polyphenol absorption drops dramatically, even if the polyphenols themselves are still in the glass.
Proteins also slow alcohol absorption into the bloodstream, which moderates the blood sugar spike that contributes to how rough you feel the next morning.
The conversation about wine additives usually focuses on what gets added, but removal changes things too. Your body isn't interacting with each compound in isolation.
Peony Lane is unfined and unfiltered.
If you can't taste the difference, you'll feel it the next morning.

Which is more scarce?
A wine that takes 3 years to make.
A whiskey that takes 15.
Wine and whiskey are both low time preference beverages. More time in the barrel should mean more scarcity, but it doesn't.
Real scarcity can't be recreated.
The first step in winemaking is growing the grapes. That growing season sets the acidity, structure, and character for everything that follows. The winemaker's job is to shepherd those flavors to the bottle without losing what the land gave them.
Whiskey doesn't work that way. Distillation erases the growing season entirely, leaving a blank slate.
A 15-year whiskey is a craft object. A 2023 Pinot Noir from a high-elevation vineyard in western Colorado is a document of that specific year. You can make another whiskey. You cannot repeat the 2023 growing season.
That's why people get mystical about wine. You open a bottle from a specific place, a specific year, and that exact thing will never exist again.

Bitcoin is a trap.
Once it hooks you, you can't get enough of it.
You rush to get as much as you can. You sacrifice parts of your life to stack sats because bitcoin is the way off the fiat hamster wheel.
One day bitcoin will pump to oblivion and change your life. If you sell now, you'll miss it and you'll regret it forever because you KNEW it would.
Congratulations, you just trapped yourself.
Bitcoin taught you that the fiat system was stealing your time and your money. Then you handed your time over to waiting on a price chart?
You need bitcoin to get off the fiat hamster wheel, but bitcoin can't do that for you.
Betting on Bitcoin has to still mean betting on yourself.

Effective immediately after last night's meeting, the town turned off 19/23 of these cameras!

The 4 cameras that stayed active are at places like the water treatment plant and water storage.
While more work needs to happen to get this type of camera out of the town for good, it was good progress.
The town must provide a cost estimate to switch to a closed loop system

Wine Club orders go out next week!
If you've been thinking about joining, now's your chance.
There's no membership fee beyond the 6 bottles of wine and you get member exclusive pricing.
You also get:
Access to endangered wines at release price – typically 50% less than what non-members pay due to scarcity.
First access to new releases – This shipment includes access to the BIP39 Reserve Malbec featuring all 2,048 BIP39 seed words on the label.
6-10% back in Bitcoin on every purchase (5% for membership + 1-5% based on lifetime spend).
Three curated shipments per year timed for Thanksgiving, Valentine's Day, and Mother's Day. Customize, skip, or add bottles to any order.
White wine note: Sovereignon Blanc is almost gone. This is likely your last chance to stock up for summer before it sells out.
This is also likely the last good shipping window until fall. Summer heat makes it too risky to ship wine safely.

Oak aging brings more dramatic shifts, but most of a wine’s quiet evolution happens once it’s already in the bottle.
Wine is almost always evolving.
Corks aren’t sealed air-tight. Tiny amounts of oxygen slip through over the years, softening tannins and deepening aromas. This slow, steady exchange lets tannins bind together, softens edges, and builds the depth that only time can create. When it happens too fast, freshness fades and the wine flattens before it’s ready.
Different closures change the pace.
A traditional cork lets in a little air.
A synthetic cork often lets in more than you’d want.
A screw cap allows almost none.
If you’re holding wine for the long run, store it cool, dark place on its side.
If you don’t have a way to do that, just find a good reason to pop that cork.
Wine only gets better with age when it’s being treated right.
