It happens. Caught my first wagyu ribeye on fire 🤷‍♂️ . The most important thing was how did it taste? 😊

Stew season. 🥘
Pasture-raised beef, fresh turmeric, ginger, garlic, and whatever vegetables are in the fridge.
A big pot of something good. 👌

Long before our roads and cities, bison roamed North America. They might know a thing or two about living well. 🦬
5 lessons from the bison:
1. Protect your own. Herds defend their young.
2. Stay close to your herd. There is strength and safety in numbers.
3. Weather the storm. Bison endure bitter winters and fierce winds.
4. Choose your battles. Not everything deserves your energy.
5. Leave something behind. Bison help sustain the grasslands and countless other species.
Protect your people. Find your herd. Weather the storms. Choose your battles. Leave the world better than you found it.

Absolutely! 🤎🦬 These three are very special to us and will live out their lives here at our ranch in Lamy, New Mexico.
The two brown females were born on the same day, almost at the exact same time. They’re practically twins! They were the last calves born into our original herd of 300+ before we transitioned to having our ranching partners manage the larger herds. Our white buffalo holds a very special significance as well.
Today, our ranch is a place for hospitality, events, and bringing people together. These three are part of the family, and our goal is to give them the happiest, healthiest, longest lives possible. ❤️

Wild-caught grouper, given the good treatment. 🐟🔥
Fennel, cumin and coriander seed ground with paprika, salt and pepper. Pan-seared in ghee, then finished with pickled carrots and fresh dill.

A reasonable amount of Wagyu brisket.
Trimmed, seasoned, braised low and slow, then cut into pieces that probably should’ve been smaller.

Gotta be careful with it because it’s so lean. Easy to dry out, but if you watch the temp closely and run it on low temp, it can absorb the smokey flavor and still be enjoyed rare.

Flank steak gets overlooked because it doesn’t have the marbling or name recognition of a ribeye. That’s also what makes it such a smart buy.
Its open grain holds seasoning and marinades beautifully, while its bold bison flavor works in everything from tacos and sandwiches to salads and steak dinners.

Bison cooks faster than beef, and because it’s so lean, there’s less room for error.
One of our favorite tricks for bison tri tip: coat it with bison tallow before cooking. It adds fat where the meat naturally has less and helps you get that beautiful crust without drying out the roast.

Still true on a random Tuesday. Hot skillet, something easy on the stove, everybody actually sitting down for a minute.
Put together a box built around exactly that.
