Whisk until combined and is starting to be a little gloopy. Set aside.<br/>2. Melt butter. I sliced into thick pads into a glass measuring cup and microwave in 20 second bursts. <br/>3. Mash bananas in a mixing bowl. I go til there are only small chunks remaining.<br/>4. Combine flour and baking powder into a second mixing bowl. I wrote 1.5 tsp baking powder but I end up throwing in an extra pinch of it for, I dunno, it makes me feel better about not being able to get as much lift because I&#39;m not using eggs. <br/>5. Add flax eggs and vanilla to bananas. Stir melted butter if it has separated while sitting and then add it to the mixture. Mix everything together until combined, mostly homogenous.<br/>6. Prepare to work fast for the remaining steps cuz baking powder will start lifting when it gets combined with liquid ingredients. <br/>7. Add the flour and baking powder mix into the banana bowl. When I add it, I try to cover as much surface area of the wet ingredients with the flour instead of just dumping it in one spot in the middle. <br/>8. Mix it all together until there are no white flour dry spots. Use a gently folding motion where you insert your spatula under the mixture and fold it over like you&#39;re flipping an over medium egg. <br/>9. Spoon the batter into the mini muffin tin. About level or just under filled is fine. top with a fresh or frozen blueberry.<br/>10. Bake for 15 minutes.<br/>11. Cool in the pan to give it support while cooling. <br/><br/><br/>Some questions I had for myself that you may also have<br/><br/>100g butter? why not 113g which is one stick of butter? <br/>I don&#39;t know. I just got finished feeding one of the twins for their overnight feed. they&#39;re getting close to sleeping through the night. the world is too fun during daytime waking hours between rolling around and grabbing their feet to get all their needed calories in. They&#39;ll be starting solids soon and I hope that&#39;ll help too.<br/><br/>In other news, taro was hospitalized for a week in January and had two hip surgeries. He had a very bad bacterial infection that took residence up in his hip joint so they had to open up his hip and flush it out. It got bad enough to affect the bone too. <br/><br/>At his age, he is growing fast so once he&#39;s recovered from the surgery he shouldn&#39;t be affected whatsoever. He&#39;s been laid up for almost a month now but since being discharged from the hospital he&#39;s been making strides in recovery. So proud of my little dude. I can&#39;t wait for him to be running around with his busy toddler antics again. <br/><br/>As for me, I switched from knitting to cross stitching. I pulled out a kit that I was working on before I had taro and picked up where I left off. The pattern is printed directly on the fabric so it&#39;s like color by number, but with stitching. a perfect blend of zoning out and repetitive work. I&#39;ve been working on a bubble that&#39;s part of the background that&#39;s mostly shades of white. Boring and engaging which is just what I need at the end of the day after the three kiddos have gone to bed. <br/><br/>It&#39;s been rough start to 2026 but this year is going to be filled with cuteness with a 2 year old and two rapidly growing twin babies.
